SUMMARY AND OBJECTIVES

 

Kefir is a fermented milk originated in the Caucasus region. It is consumed nowadays in East European countries. Kefir as fermented milk is obtained inoculating milk with kefir grains (symbiotic association of bacteria and yeast, included in a matrix composed by polisaccharides and proteins). The probiotic properties of kefir have been the matter of several research articles and they have been investigated by evaluating its participation in the stimulation of the immune response, its antibacterial and antifugal properties, etc. The milk whey is an effluent of the dairy industry, rich in lactose and proteins (b-lactoglobulin, a-lactoalbumin). Its treatment as an industrial effluent is expensive due to the high BOD (Biochemical Oxygen Demand). For this reason, it is generally used for porcine feed, but the trend is to convert it in by-products of higher added value.

On the other hand, kefir grains have the capacity of fermenting whey and remain viable in the fermented whey. Taking into account the nutritional properties of lactoserum (it is rich in lactose and proteins) and the probiotic properties of the kefir grains, our aim is to develop a new product obtained by fermenting milk whey with kefir grains. This product will certainly have an increased nutritional value and potential commerciality.

For this reason, this network joins research groups with complementary expertise areas (lactic acid bacteria, food science, kefir, enzymes, nutrition, analytical methodologies, microorganisms' preservation) and enterprises interested in the field, with the purpose of integrate the existent knowledge and develop perspectives in the Future.
